Fully Loaded Raspberry and Coconut Shake

An indulgent but healthy milkshake loaded with fresh and freeze-dried raspberries and coconut cream. Dairy free and vegan, too!

A fully loaded milkshake, made pretty with whipped coconut cream, freeze-dried raspberries for that burst of intense flavour and fresh ones for juiciness. My mouth's watering just writing this down.

If you drink milk, follow the instructions but just use 350ml fresh milk and top with whipped cream. Oh, and if you're using a straw, use a washable metal one or a paper one. Go eco.

Pour, blend, load up and slurp. Beautiful. 

Fully Loaded Raspberry and Coconut Shake
Makes 1 very large shake or 2 smaller ones

400ml can full fat coconut milk
1 tsp vanilla extract
15 fresh raspberries, freshly washed
1 tsp freeze-fried raspberries

The night before you want to make the shake, place the can of coconut milk into the fridge. 

When you're ready, open the can of coconut milk and scoop out three quarters of the coconut cream that's now solidified on the top, into a small bowl. Pour the rest, with the coconut milk that's now in the bottom of the can into the jug of a blender. I use this one

Add the vanilla extract to the jug, along with 9 of the fresh raspberries, and blitz until smooth. 

Pour the shake into one large glass or two smaller ones, and turn your attention to the coconut cream. Whip it with a spoon, so that it's fluffy and smooth, and then gently spoon it on top of the glasses. Some will sink, some will stay on the top, it's all good. Just get some on there. 

Sprinkle with the freeze-dried raspberries and top with some of the fresh raspberries. Pop in a straw and drink straight away.
