Bacon Wrapped Cod Roasted with Asparagus
Want to incorporate more fish into your diet? Then this effortless recipe has you covered - salty bacon, wrapped around sweet cod fillets and then roasted with asparagus. You just slide it all in the oven and take it out when it's ready. Simple.
I bought a couple of cod fillets for my husband and I, and wanted to jazz them up a bit. Bacon seemed like the perfect combo - salty, sweet, crisp - to offset that innocent, pale white cod fillet. Chuck in a pack of fresh asparagus and dinner was sorted. You could serve this alongside a nice green salad if you like, or your favourite steamed veggies.
Bacon Wrapped Cod Roasted with Asparagus

Ingredients
2 sustainably-sourced cod fillets
2 rashers of smoked, streaky bacon
10-12 fresh asparagus spears
2-3 tablespoons olive oil
pinch of salt
Method
Preheat the oven to gas mark 6/200º/400ºF. Get out a shallow roasting dish. Wrap a bacon rasher around each cod fillet and tuck the end underneath it as you place it in the roasting tray. Rub a little olive oil around the fillets.
Snap the woody ends off the asparagus spears and discard - give the tips a rinse under the tap. Shake them dry, and then arrange them in the roasting dish around the fish. Season them with a little salt and then drizzle the olive oil around the asparagus and rub a little over the fish and bacon.
Slide into the oven and leave to cook for around 15-20 minutes. Test the fish is cooked with a sharp knife before serving - the fish should be flaky and opaque. Serve while still hot.
