Sugar Free Vanilla Buns
Just to let you know, this post was written before I started the paleo diet to help ease my psoriasis. Nowadays I eat a more allergy-friendly diet, but leave these older, non-paleo posts up in case they are useful to readers, as I know not everyone eats the same as I do. Thanks for your understanding.
The good thing about these is that the vanilla bean paste is quite strong, so it gives the illusion of sweetness without any added sugar. If you wanted to, you could add a tablespoon or two of sweetener (like Splenda) or just make them 'low sugar' and just add some caster sugar to sweeten. But I think that with the added honey or fruit they don't really need it.

Ingredients
225g self-raising flour
1 tsp baking powder
200ml skimmed milk
1 large egg
1 tsp vanilla bean paste
100ml vegetable oil
Low-Fat Greek yoghurt, runny honey and strawberries, to serve.
Method
In a bowl, combine the flour and baking powder. Measure the milk and vegetable oil into a jug and then crack in the egg and beat in the vanilla bean paste. Pour the wet mixture into the dry mixture and mix gently until just combined. Pour into the indents of a silicone muffin tray (or use muffin cases) and bake at 200ÂșC for 15-20 minutes. Split with a knife and serve with a little yoghurt on top and a drizzle of honey, or some sliced strawberries.
