Breakfast Tacos
Not a recipe this one today, but more of an instruction.
You ready?
Let's do this.
Grab yourself a couple of your favourite warmed tacos - paleo ones, gluten free ones, wheat ones, corn ones... whatever you like. Scatter over some fresh rocket (arugula) leaves and put them to one side for a sec.
Heat up a medium sized frying pan and drizzle in a teaspoon of olive oil. Add a couple of rashers of smoked back bacon and fry on each side for 2 minutes or until cooked and crispy. Push to one side and then tumble in 6 trimmed asparagus spears. Toss them around in the pan and allow to cook for a couple of minutes, until they're softened, with a slightly golden outside. Lift out of the pan and onto your waiting tacos. Add a little more oil to the pan and crack in two eggs. Fry until crispy on the bottom but with a sikly, runny yolk. While the egg is frying, slice up an avocado into two halves and arrange the slices over the bacon and asparagus.
Top with the fried eggs, add a little pinch of salt and pepper and then drizzle with sriracha.
Roll up and schmoosh into your open wide mouth.
