Sweet Potato Shoestring Fries with Garlic Mayonnaise

Shoestring fries! Is there a better snack, really? They're salty, crunchy soft and tangly... and especially gorgeous grabbed by the forkful and dipped into some rich garlic mayo. Go make them!

Sweet Potato Shoestring Fries with Garlic Mayonnaise
Serves 3-4
3 medium-large sweet potatoes, peeled and cut with a julienne peeler
1-2 tbsp olive oil
1 lime
sea salt
3-4 tbsp Hunter and Gather garlic mayo, to serve - or grate 1 small clove of garlic into your favourite good quality mayonnaise and add a small twist of black pepper

Preheat your oven to 150ºC/300ºF and get out a large roasting tray and line with greaseproof paper. 

Scatter the julienned sweet potato over the tray and toss with the olive oil. Add a pinch of the sea salt and bake for 45 minutes to 1 hour - keep an eye on them to make sure they don't burn - and give them a little shake every now and again to make sure they cook evenly. 

Once cooked, remove from the oven and squeeze with the lime juice and add a little more salt if you like, to serve. Spoon the mayonnaise into a pot for dipping.
