Almond Cacao Paleo Sandwich Cookies

I don't want to say that these are the best flourless cookies I've ever made, but...

They are chewy, light - think of them like a chunkier version of a macaroon. And then they're sandwiched with this beautiful nutty-chocolate filling. Seriously, the hardest part is waiting for them to cool.

I've been asked if other butters work with this - I've only tried peanut, pistachio and almond butters so I reckon any nut butter should work, but each will give you a different flavour of course depending on the nut used. I haven't tried them with seed butters, but if you do, let me know how you get on!

Almond Cacao Paleo Sandwich Cookies
Makes 6-9, depending on size
Ingredients
160g almond butter
100g coconut sugar
2 tsp raw cacao powder
1 egg
half teaspoon vanilla extract
half teaspoon bicarbonate of soda

For the filling: 
2 tablespoons almond butter 
drop of vanilla extract
1-2 teaspoons cacao powder


Method
First, preheat your oven to 160ÂșC and line a baking tray with greaseproof paper. 

In a bowl, mix together the almond butter, coconut sugar, cacao powder, egg, vanilla and the bicarb and stir well to combine. Drop teaspoon-sized drops onto the baking tray, leaving a little room between each one - they will spread a little. 

Bake for 10-12 minutes, until crackled on the top, slightly flattened and cooked through. Take out and leave to cool. 

Once completely cool, in a small bowl mix together the almond butter, vanilla and cacao powder to make the filling. Spread a little filling on the flat side of one of the cookies and then sandwich with another. Keep going until all the cookies are finished and eat!
