Peanut Butter, Banana and Vanilla Protein Smoothie

A creamy peanut and vanilla flavoured smoothie to get you started on your Monday morning. 

Peanuts. It's weird. Did you know that they're a legume - which means they're from the same family as lentils and beans and not walnuts and almonds? And people can have really severe allergic reactions from them. 

And because they're a legume, they're not paleo, like other nuts are. 

But peanuts are one of the foods I've successfully reintroduced, paleo or not. And it's gone really well. I can't eat lentils, beans or chickpeas but occasional peanuts are A-OK. Sprinkled over Thai curries, into stir-fries or eating a few as a snack. 

My daughter loves peanut butter - she has it spread over rice crackers in the morning with sliced banana for breakfast. I love it in this little smoothie. It's the flavour of vanilla and peanuts together that gets me - I always loved that combination and used to bake it up into cakes and buy stashes of vanilla peanut butter doughnuts before I started eating more healthily. 




It makes a nice change from fruit smoothies all the time and, if you use plant-based milk, it's vegan and dairy-free.

Peanut Butter, Banana and Vanilla Protein Smoothie
Serves 1
Ingredients
1 banana, peeled and frozen
200ml your preferred milk (e.g. lacto-free milk, unsweetened almond milk, hemp milk)
1 dessertspoon of natural peanut butter
1 tsp vanilla extract

Method
Place all the ingredients in a high-speed blender and blend until smooth and creamy. Serve cold.
