Paleo Banana Raspberry Pancake Stack

So the story behind this recipe goes something like this:

I'd woken up, nice and early. Showered, dressed, packed lunches done, ready to leave the house. Got the kids up, dressed, breakfast, brushed teeth. About to leave for school, on time, when 8-year old can't find her school shoes. I tell her off, telling her she must know where her shoes are. She goes off in search for them. I join her. 11-year old, patiently waiting at the door. 8-year old finds her school shoes in her sister's room. No idea what they're doing there, she leaves things all over the place. She puts them on, gets her coat and backpack on and goes towards the door. 

I go to my desk. With a gulp, I realise my keys aren't there. I feel like I have a rock in the bottom of my stomach. I've lost my keys. I can't get back into the house. Husband's at work, about 3 hours away. I go in search of them, the two girls whining at me to hurry up or they'll be late. After a frantic scrabble, I find my keys. Phew.

Get halfway up the road, when 8-year bursts into tears and gets her wobbly lip going because she's forgotten her goggles for swimming that day at school. We have a conversation about her swimming, just once, without her goggles, seeing as we're already late. She can't. I run back, find the goggles and slip them into her backpack. 

We get to school on time, I have a chat with my friends on the way home and everything's good. At home, I empty the damp washing out of the machine and into the tumble dryer. The light comes on, the dryer makes a whirring noise, and I can smell smoke. Tumble dryer's gone pop. It's raining. Decide I need a cup of tea. Go to turn the gas on the hob and there's the familiar hiss, but no flame. That gas ring was still damp from when I over-boiled the rice the night before. 

I need more than a cup of tea. 

My eye flicks towards the fruit bowl, where I spot a banana and a box of eggs on the worktop alongside.

I need a big, sweet, sticky stack of pancakes. That's what I need. 

These pancakes are gluten free - they're just made from eggs and bananas and a dash of vanilla extract - so they're paleo and dairy-free too. They're super easy to make, and you just beat everything up in a bowl and fry until golden. I stacked them up with frozen raspberries and coconut yoghurt. And finished with a big squeeze of maple syrup.

Banana Raspberry Pancake Stack
Serves 2
Ingredients
2 eggs
1 medium sized banana
1 tsp vanilla extract
1 tsp mild, unflavoured coconut oil
big handful frozen raspberries (or use fresh, if you have them)
about 5 tbsp coconut yoghurt
maple syrup, to serve

Method
First, crack the eggs into a bowl and beat them until smoothish. Peel the banana, place into the eggs and mash it well. You'll end up with a kind of pancake-like batter - it might be slightly lumpy. Just beat it all up as best you can. Stir in the vanilla extract. 

Heat the coconut oil in a clean frying pan and, when it's melted and hot, spoon the pancake batter into the pan, in 2-tbsp dollops. It will sizzle pretty quickly and start to set. After 40 seconds or so, lift up the pancakes. They should be golden on the bottom. Flip them over to cook on the other side for another 30 seconds or so, until golden. 

Lift the cooked pancakes out on a board or tray. Now stack it all up. 

On a plate, place one of the pancakes on the bottom and then add a few raspberries followed by a scant tablespoon of coconut yoghurt. Place another pancake on top and then add the raspberries and yoghurt again. Do this one more time and finish with another pancake, so you've stacked up four pancakes. Do this again for the second portion. Finish with a drizzle of maple syrup. 

Eat immediately.
